Norwegian talents take on the Croatian farmer’s market with Scandinavian-style cooking

Charming Croatia is excited to spice up the fall schedule and accompany two talented Oslo chefs to Croatia! 

On Oct 21-22, Daniel Rosvold (30) and Robert Elias Rydland (24) - previous chefs at Oslo's Gamle Raadhus restaurant, will showcase Scandinavian-style cooking skills at a gastronomic seminar. The project, which also showcases Michelin-star chefs and sommeliers from across Croatia and Italia, takes place in a farm-to-table educational workshop in the cozy town of Pazin. Guests are hospitality professionals who are meeting up to experience various style cooking with purely local ingredients.

Combining elements of Croatian and Norwegian-style cuisine!

The Norwegian talents, who have been busy competing in national cooking championships for years (such as NM i kokkekunst), will spend two days demonstrating their Norwegian take on the Istrian boskarin (cattle) and also showcase their interpretation of the Adriatic fish.

While taking in the pleasant weather and surroundings, the chefs also plan to visit the International Prosciutto fair in Tinjan and Truffle days in Livade.

Rosvold and Rydland hope to inspire guest with a different flavor palate and modern Nordic plating techniques. The duo spent a few weeks this past summer to get to know the area better and enjoyed local delicacies like truffles and honey and the Istrian wine.

“We are really looking forward to showcasing Norwegian-style cooking,” says Rosvold. Dried cod, beetroot, tartar, and oxtail stock are some of the items that will be presented on the Norwegian menu. 

“We hope to inspire people to look at the fresh produce and basic techniques in a different way. And can’t wait to use those fantastic truffles, especially.”

Rosvold is currently working as a head chef in a private residence of American Ambassador in Oslo, while Rydland is a chef at Edda Restaurant. Once back in Norway the duo is busy planning their next project, restaurant Glitch.

The chef’s workshop is run by Azzri, the first agency of its kind in Croatia with a specific devotion to coordinate production-wise activities into rural areas of Istria. The main focus is on environment, ecology, culture, and educating local talent.

The gastronomic workshop (which runs 6 weeks in total), focuses on helping local businesses stay competitive in rural tourism. Rosvold and Rydland hope to inspire guests with different flavor palate and modern Nordic plating techniques.
